4 Med. Zucchini (Whole)
3/4c. Tomato (Finely Chopped)
1/3c. Green Pepper (Chopped)
1/4c. Green Onion (Chopped)
1/4tsp. Morton’s Lite Salt
1/4tsp. Dried Basil
1/4tsp. Dried Oregano
1/3c. Shredded Reduced Fat Cheddar Cheese

Place zucchini in large pan and cover w/water. Bring to boil. Cover, reduce heat, simmer 4-6 minutes or until crisp tender. Drain and cool. Cut zucchini in half lengthwise. Scoop out pulp, leaving ¼” thick shells. Chop pulp. Reserve shells.

Combine pulp, tomato and next 5 ingredients. Stir well. Spoon into zucchini shells. Place in 9”x 13” Pam sprayed baking pan. Bake uncovered at 400° for 15 minutes. Sprinkle w/cheese. Bake 5 minutes more or until cheese is melted.
