Linguini with Asparagus


2V, 1fat, 1 limited S, 1 dairy

  • ½ C. cooked linguini
  • 1 C. raw asparagus, chopped
  • 3 scallions, chopped
  • ½ tomato, chopped
  • 1 tsp. olive oil
  • 1 tsp. lemon juice
  • Lite salt
  • 1 oz. lite cheese, grated

 Saute, scallions, garlic, asparagus and tomato until tender-add all other ingredients, except cheese, toss with linguine.  Sprinkle with lite cheese.  Can be served chilled in the summer
