2C. Fresh or Frozen Corn
15 – 16 oz. Can Kidney or Pinto Beans (Rinsed & Drained)
1c. Seeded Plum Tomatoes (Chopped)
1/4c. Fresh Basil (Chopped)
2Tbl. Olive Oil
2Tbl. Lemon Juice
2Tbl. Italian Parsley (Chopped)
2 Lg. Garlic Cloves (Minced)

Combine first 5 ingredients in large bowl. Wisk oil, lemon juice, parsley and garlic in small bowl to blend. Stir in corn mixture. Season with Lite Salt and pepper to taste. Serve at room temperature.
